Can someone explain to me what a ‘memo’ is and why I don’t see that in my stacks wallet? I see this when I try to transfer STX to an exchange.

It’s just an extra 34 bytes of scratch space in the transaction. You can put whatever you want there (think of it like the memo field on a check). Exchanges often use it to record their own transaction IDs.
